For Christmas my boyfriend’s mother recently gave me this cookbook, a magazine really, that featured over a dozen different recipes where I could use my cast iron skillet.
I WAS IN LOVE.
Ever since I got my cast iron skillet I’ve been using it nonstop for almost everything. Eggs, pork, steak, vegetables, you name it.
The first recipe I tried was the Grilled Cheese with Brie and Preserves. Talk about elevating regular grilled cheese night to gourmet levels. I went down to the Cheese Lady (a local store specializing in cheese and everything related to it: The Cheese Lady) Bought a brie that they recommended for it’s creamy quality. I also nabbed some fig jam, figuring that out of the recommended preserves it would be the best pairing, and prosciutto to balance the sweetness of the jam. They were definitely a success that will be made again.
The next recipe I tried was the Pot Roast Steak. I did have some difficulties with that one which surprised me. I’ve done many styles of steaks and sauces in the cast iron before and they’ve all turned out slightly better than this. I think my problem lay in the sauce I tried to follow. Regardless, it was still relatively tasty.
I think the next one I’m going to try is a side dish, The Roasted Fennel and Brussels Sprouts.
