Avocados, delicious, nutritious, and sometimes a bit expensive. You just have to time it right like right now when Meijer in my area was having a crazy sale of avocados for only 88 cents each. Score. I brought home an entire bag full with plans to make homemade guacamole for fajitas this week, ones to snack on with a sprinkle of salt, avocado fries, and one of my favorites, avocado toast.
This particular combo is one of my favorites because it packs a good flavor for so few ingredients.
First of all let’s talk about this tool that I use to get in all of my avocados. Seriously, one of the best single use kitchen gadgets I’ve ever brought home. Normally I’m hesitant to clog my small apartment cabinets with tools that can only be used for one thing (do I really need a cherry pitter?) but I can’t explain enough good things about this.
Not that perfectly ripe avocados aren’t easy to scoop out, this is just nice that everything you need (a duller blade with teeth, pitter scoop, and slicer) is all in one tool. No more digging out knives and spoons, and wondering how your going to get perfect slices. And it is so tiny! It doesn’t take up any more space than a microplane. So on with the recipe.
Slice of bread
1-2 Slices of Tomato
2 Slices of Mozerella Cheese
Sprig of Fresh Basil, chopped
Just toast the bread and top it with mashed avocado, basil, tomato, mozzarella, a pinch of salt and pepper to taste, and drizzle lightly with balsamic vinegar. Enjoy.
This is a great recipe that can serve as a healthy breakfast or snack. Since it’s served cold it’s super easy to transport to work or school and assemble it fresh. Hope you enjoy and let me know your favorite avocado toast combos in the comments below!
